Employee in the make line area touched head/hair; then put on a glove and went to handle food items without washing hands. Employee was asked to wash hands and did so. Ensure that employees wash hands after engaging in activities that may contaminate hands and when changing tasks. Corrective Action: Corrected at time of inspection.

The PIC stated that the drain has remained at the same level for a few days and a plumber is scheduled to come repair the drain by tomorrow. PRIORITY VIOLATION-5-205.15 (A), P: System Maintained in Good Repair; According to Law 1) Remove the RO system that feeds into the countertop steam units. Or provide an RPZ (ASSE 1013) backflow device upstream of the RO system and provide stainless steel dual check valves (ASSE 1022) for the countertop steam units. Ensure no backflows are installed above the prep table. Ensure there is no copper/brass lines or fittings downstream of the RO system. 2) Use the existing RPZ (ASSE 1013) for the rethermalizer. 3) Repair the AVB backflow device at the mop sink faucet. AVB was leaking at the time of inspection. 4) Provide a riser for the 3-compartment sink. Riser must not go past the bottom basin of the 3-compartment sink. 5) Provide rigid drain lines and ensure all drain lines have a 1-inch air gap above the floor sink.
