Observed tofu 48*F, raw beef 48*F, raw chicken 52*F, cooked shrimp 57*F, fried tofu 52*F in the cold table on cookline at the time of inspection. Also observed liquid egg in ice bath 52*F on cookline at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC added ice to TCS foods and moved liquid egg to the walk-in cooler to rapidly cool at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed no paper towels at the handwashing sink by the ice maker. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC stated machine was out of batteries. PIC was instructed to provide hand drying provision for handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed chicken slicer with food debris still on it stored as clean and ready to use per PIC. All food-contact surfaces must be cleaned to sight and touch.
