Inspector's notes

Observed open containers of refried beans (open/dated 10/19), cottage cheese (open/dated 10/26), and dairy pudding open/dated 10/27) in the walk-in cooler. Observed the TCS foods to be past the 7 day discard date; PIC discarded, see embargo. The Food Code requires that TCS foods be discarded 7 days after opening/prep when held at 41F or less. Day 1 begins the date that a package of TCS food is opened, such as deli meats, or once cooked/prepped, such as noodles or proteins. Adding 6 to the start date (6+1) determines the discard date. Corrective Action: Corrected at time of inspection.

2ND CONSECUTIVE Observed a stucco wall at the outdoor mop sink. Discussed installing FRP 12" above the faucet on the wall surrounding the mop sink, as noted on the OC Re-inspection report. Discussed installing escutcheon covers at the handwashing sink at the cook-line. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Also discussed securing the sinks/drainboard to the wall. Equipment that is stationary (not easily moved) and subject to moisture must be sealed and maintained to prevent the harborage of insects and rodents. Corrective Action: Correct prior to next routine inspection.

Observed unsealed concrete at the corner of the floor, near the freezer door in the walk-in cooler. According to PIC, maintenance is aware of the repair needed on the floor. Please seal the concrete, as noted on the OC Re-inspection report. Also discussed securing the metal threshold to the floor and replacing the heat strip in the freezer door. Observed a stucco wall at the outdoor mopsink. Discussed installing FRP on the wall surrounding the mopsink, as noted on the OC Re-inspection report. Discussed installing escutcheon covers and sealing around all pipe penetrations, as noted on OC Re-inspection report. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Corrective Action: Correct prior to next routine inspection.
