Inspector's notes

Observed TCS food being held in a air curtain reach-in and in walk-in with an internal temperature of 49-51*F. Internal temperature registered with an internal probe thermometer. Ambient temperature of reach in unit registered 50*F with min/max thermometer. Ambient temperature of walk-in unit registered 45*F with min/max thermometer. Per PIC all TCS food has been in units for greater than 4hrs. TCS food included half-gallons of milk, pre-made sandwiches, and meat/cheese trays. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.

Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Do not place TCS food in unit until repaired to maintain temperatures at 41*F or less. Correct prior to re-inspection on 9/5/25.
