In double door reach in refrigerator, cheesecakes without date mark. Per manager, cheesecakes were prepared >24 hours. Instructed manager to provide date marks on sheet pans of mini cheesecakes. Discussed proper date marking of TCS (time/ temperature control for food safety) foods. RTE/TCS foods requiring date marking are to be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

In room off of kitchen, packaged food and chest freezer stored on carpeting. Replace carpeting with a smooth and easily cleanable surface if food product is stored. Recommended tile and storing of only non-TCS pre-packaged food for storing in room off of kitchen. (A) Except as specified in ¶ (B) of this section, materials for indoor floor, wall, and ceiling surfaces under conditions of normal use shall be: (1) SMOOTH, durable, and EASILY CLEANABLE for areas where FOOD ESTABLISHMENT operations are conducted. Corrective Action: Correct prior to next routine inspection.
