Inspector's notes

In kitchen, in cold holding drawers, TCS foods (sliced cheeses in bread, egg bites) with internal temperatures of 49*F-52*F. Per employee, cheeses and egg bites were in cold holding drawers >24 hours. Cheeses and egg bites were discarded. See embargo form. Ambient temperature of bottom drawer was 42.3*F and 50*F in top drawer, taken with inspector min/max irreversible thermometer. Discontinue storing of TCS foods in drawers until repaired. Maintain TCS (time/temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.

Observed a metal pitcher of sanitizer water & wiping cloth stored next to the espresso machine. No label with the common name of the chemical observed on the pitcher. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. The pitcher was labeled at time of inspection. Corrective Action: Corrected at time of inspection. 7-202.11 - Priority Foundation: Restriction-Presence and Use Addl Notes: Observed a can of Raid Ant & Roach aerosol pesticide on the ground near the front handwashing sink.
