Inspector's notes

Observed several containers of house made napa kimchi (originating from neighboring restaurant/same ownership) with prep date of 5/22/26. Informed person in charge, and product was discarded at time of inspection. Also reviewed obtaining a variance if interested for extending shelf life of kimchi. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
