Observed food employee wash and rinse blender mixer, then observed food employee quickly dunk pitcher in chlorine sanitizer and remove from the sanitizer. Contact time in sanitizer was not 10 seconds or longer. Food-contact surfaces sanitized using chlorine sanitizer must be sanitized with a contact time of least 10 seconds.

Observed chlorine sanitizer concentration in the three compartment sink at 200 PPM. Observed employee sanitizing blender pitchers at time of inspection. Large concentrations of sanitizer in excess can be harmful because residues of the materials remain. Acceptable chlorine sanitizer concentration shall measure between 50-100 PPM. Sanitizer was remade a time of inspection and retested at 50PPM. Corrective Action: Corrected at time of inspection.
