Observed cut tomatoes, cooked rice, and house made curry stored in the walk-in cooler. Per PIC, the food items were prepared 2 days prior to the inspection. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed diced tomatoes with temperature of 64 degrees Fahrenheit in the prep table. Prep table is ambient temperature. Per PIC, tomtoes are kept in the reach in until needed to make an order and then put in the table. Discussed using an ice bath for the tomatoes. Cold holding prep table is storing non-tcs food at ambient temperature. PIC returned tomatoes to the reach in to chill to 41 degrees Fahrenheit. TCS foods shall be kept at 41 degrees Fahrenheit or below to prevent microbial growth. Corrective Action: Corrected at time of inspection.
