The PIC stated food processing may occur in the couple of months. Informed the PIC that shellfish cannot be repackaged unless it is approved through a variance. Informed the PIC to contact the AZDA for wholesaling meat products. Reviewed sanitation procedures, cold holding requirements, shellfish tags, handwashing, and employee illness.
