Inspector's notes

No Certified Food Protection Manager (CFPM) was onsite. A CFPM is required to be on the premises during all hours of operation. In Compliance with the Food Code, Maricopa County requires a Food Manager present during operating hours. Emailed Maricopa Policy changes and additional resources on where to acquire a Food Manager Certification Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed dishes being washed with soapy water and then rinsed and dried without sanitizing. EHS stopped staff and reeducated on sanitizing requirements. The three-compartment sink was properly set up and wash, rinse, sanitize (and air-dry) procedures were demonstrated. All improperly sanitized dishes were sanitized at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Food-contact surfaces sanitized using quaternary ammonia must be sanitized with a contact time according to manufacturers specifications. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed various dairy based sauces (51-62°F) out at room temperature on the buffet bar. Staff stated their cold table is currently broken, and they are refreshing these pans of sauce frequently. All sauces were placed one hour prior. Discussed the importance of having an emergency Time Control procedure and documentation in place before switching to time control. Once foods are on time control they MUST stay on time control until discarded (after 4 hours). All TCS foods being held under time as a control were properly time stamped at time of inspection and an emergency Time Control Policy written. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed multiple white, red, orange powders and liquids in clear plastic containers or in containers previously used by another food product. All bulk food items not easily identifiable must be labeled with common name of food. Foods were labeled at time of inspection. Corrective Action: Corrected at time of inspection.
