Inspector's notes

Observed three compartment sink with dishes in the quaternary ammonium bin with 0ppm at time of inspection. Discussed with person in charge (PIC) the importance of proper sanitizer levels and proper monitoring of sanitizer levels for quaternary ammonium to be at 150ppm to 400ppm. PIC started a new batch and food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Please address the following items prior to the next 60 days: 1. Provide at least one inch air gap from the flood rim for the drainpipe from the espresso machine to the above ground floor sink. Recommend using metal clamp to mount the drainpipe on the wall so the pipe will not drop/ sag into the floor sink. 2. Noted the ice machine is connected to a sump pump. Recommend relocate the ice machine to the opposite side of the counter where there is access to a floor sink. Otherwise, please have a plan in place for when the sump pump fails. Provide monitoring log and plan of action. 3. Provide air curtain over the roll up door. There was an air curtain over this door before. Currently the door is shut. Please re-install.
