Inspector's notes
At the front counter, observed mixed fruit tea containing cut watermelon. Internal temperature of watermelon at time of inspection was 45-51 degrees F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Person in charge (PIC) stated items prepared at opening about an hour prior. PIC added ice to tea at time of inspection. Corrective Action: Corrected at time of inspection.
