Inspector's notes

At the catering/online order hot well, observed grilled chicken with internal temperature range of 125-126 degrees F. In the same hot well, observed grilled honey chicken with an internal temperature of 126-128 degrees F. Person in charge (PIC) stated items were just cooked to 165 degrees F and been in unit since opening less than 1 hour prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC added additional water to hot well and all TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

In the catering/online order cold holding unit, observed cilantro lime sauce with an internal temperature of 50-56 degrees F. PIC stated item was placed in unit less than 1 hour prior at opening. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to walk-in refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
