Inspector's notes

Observed a sanitizer bucket in the hand sink behind the front counter. Discussed with person in charge (PIC) that hand sinks need to be clean, clear, and ready to use at all times. PIC moved the bucket at time of inspection. PIC will ensure establishment discontinues use of handwash sinks for all activities that are not for handwashing. PIC relocated all items blocking handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

The reach-in cooler across from the cook station was not holding temperature. Imitation crab meat, diced tomatoes, and cut lettuce were holding between 47*F - 52*F using probe thermometer. Min/Max temperature showed 50.2*F at the bottom of the unit. The analog thermometer for the unit showed 49*F. Person in charge (PIC) discarded at time of inspection. See embargo form. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held more than four hours were discarded by PIC at time of inspection. See embargo form. Foods that were placed in the unit within two hours prior were moved to a different cold-holding unit at time of inspection. Corrective Action: Corrected at time of inspection.
