Hard boiled eggs-72-78F cooling in the reach in cooler. Per employee, the eggs were made and began cooling a little over two hours prior. The eggs were relocated to the reach in freezer to rapidly cool. Ensure that PHF/TCS foods are cooled within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F or less. *Cooling of TCS food items is not permitted with a class two permit. Corrective Action: Corrected at time of inspection.
