Inspector's notes

Observed multiple shellstock tags without record of last date sold on the tag. In addition, the establishment did not have an organized system in place to store tags in chronological order for 90 days past the last sold date. Shellstock tags must be kept with shellstock until sold, dated with final sale date, and maintained in chronological order for 90 days onsite. Educated management on proper documentation and records keeping of shellstock tags at time of inspection. Manager purchased binder to better organize tags at the time of inspection. Manager also wrote standard operating procedure to train staff on shellstock handling and documentation at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed no detectable amounts of chlorine sanitizer at the mechanical dishwasher where dishes were being actively washed. Upon further investigation, observed an empty bucket of chlorine sanitizer hooked up to the mechanical dishwasher. The establishment shall sanitize their food contact surfaces with chlorine based sanitizer at a concentration between 50-100 ppm. The manager replaced the sanitizer bucket, confirmed proper concentrations with test strips and rewashed, rinsed, and sanitized all dishes that had been done prior to inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed black organic material on both soda gun nozzles at bar. Reviewed cleaning frequency with person in charge and importance of routinely checking and sanitizing nozzles. Discussed importance of keeping surfaces clean to sight, touch, and free of an accumulation of dust, organic matter, food residue, or other debris. Person in charge removed soda guns for immediate cleaning. Corrective Action: Corrected at time of inspection.
