Per manager, the following methods are being employed to eliminate the nuisance: additional cleaning, enzyme solution for floor sinks, and installation of wall sconces near affected areas. Discussed location of wall sconce installation and closing the gap at the bottom of the backdoor with the manager. Will follow up at next routine inspection.

The establishment did, however, have invoices from their suppliers containing language indicating compliance for parasite destruction for their sushi salmon. Instructed establishment to contact suppliers and request parasite destruction documentation. *The establishment has applied for dog friendly patio permission with the department. Upon inspection, the establishment is in compliance with all dog friendly patio requirements and is approved.

Inspector's notes

Observed both the mechanical dishwasher in the kitchen and at the bar measuring 0 ppm chlorine sanitizer. Both dishwasher were being used at the time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing with a chlorine based sanitizer concentration ranging between 50-100 ppm. Discussed priming the sanitizer lines after replacing with a new sanitizer bucket and utilizing test strips frequently to confirm proper concentrations are being achieved with the head chef. Corrective Action: Corrected at time of inspection. *2nd consecutive violation

Inspector's notes

Mechanical ware washing machines in the kitchen and bar area were observed to have 0ppm chlorine using chlorine test strips. Manager primed both machines and checked chemical levels and there was no concentration change. Manager placed a call with ware washing machine company to have them serviced. Establishment will utilize three compartment sink for sanitizing step during ware washing until the ware washing machines are repaired. Dishes that were inside machines during inspection will sanitized in the three compartment sink. Ensure mechanical ware washing machines are sanitizing between 50ppm and 100ppm of chlorine during cycles.
