Observed hand sink located along the prep line beginning to separate from the wall. The establishment shall maintain all equipment intended to be fixed to the wall with proper sealing to maintain the premises in good repair and to prevent harborage conditions for pests. Corrective Action: Correct prior to next routine inspection. 4-101.18 - Core: Nonstick Coatings, Use Limitation Addl Notes: Observed cooking pans made of nonstick materials along the cook line with significant scratching/scoring. The establishment shall maintain any cookware made using nonstick coatings in good repair to prevent the migration of deleterious material to food. The manager discarded the scored pans at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Sliced tomato, shredded cheese, cooked chicken, salmon, ground beef, beef skewers, and steak with internal temperatures between 55 degrees F and 64 degrees F were cold holding in low-boy unit under flat top grill. Ambient temperature of the unit was 50 degrees F using min/max thermometer. PIC stated that some electrical work was being performed and the power was off for approximately one hour prior to opening. All TCS items were moved to the walk-in cooler to rapidly cool to 41 degrees F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
