In the back prep line, observed 2 dicers, that were stored as clean, with food debris still in the dicer blade grid. All food contact surfaces that are stored as clean must remain clean to sight and touch. Managers had dicers rewashed. Corrective Action: Corrected at time of inspection.

Inspector's notes

On the back prep line, observed a hot box with 3 pans of mashed potatoes that were holding at 125*F - 132*F. Potatoes were below 135*F for less than 2 hours and were reheated for hot holding. On the front cook line, observed a hot box with a pan of whole, cooked chickens holding at 113*F to 137*F. Per manager, the chickens had been in the unit for over 2 hours and were embargoed voluntarily.
