Inside cookline main reach-in fridge, observed ham, sausage, shredded cheese, pico de gallo, carnitas, taquitos, red salsa, green salsa, premade beef tacos, and chorizo 47-52*f degrees. Per PIC all items had been out of temperature less than 4 hours. Corrective Action: Corrected at time of inspection.

Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
