Observed imitation crab at 50*F using probe thermometer, verified by person in charge that was prepared 90 minutes prior to inspection cooling in the top of the make-line unit. Notified person in charge and they relocated to the walk-in to rapid cool. Corrective Action: Corrected at time of inspection.
