Inspector's notes

Observed at the hand wash sink in the prep area by the three compartment sink to have a cart blocking access and yellow dirty towels were stored in the basin. Discussed with person in charge (PIC) Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC relocated all items blocking sink and will ensure the sinks are accessible at all times. Corrective Action: Corrected at time of inspection.

Observed in storage several containers of pink curing salts with one container open. Per PIC they are just onsite and are not actively being used at the time of inspection. Discussed with PIC all ingredients in facility shall be approved. Discussed with PIC to use pink curing salt, a Variance and approval will be required through Maricopa County. PIC voluntarily discarded at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed the floor drain at the hand wash sink in the outdoor cooking area covered with a cement paver blocking the drainage pipe from being able to drain into the floor sink. PIC removed the paver and observed the floor drain was full of liquid and debris. Discussed with PIC All plumbing must be maintained in good repair at all times. PIC put arm into the floor sink to pull out any debris at the time. Debris was removed and drain did not fully drain and did not exceed the rim. Hand wash sink faucet was turned on for a continuous flow of water over time and floor drain water level remained the same; drain did not overflow. PIC had installed a portable hand washing sink and had plumbers arrive. Floor drain was slowly draining. PIC will temporarily close establishment if floor drain overflows. Corrective Action: Correct prior to re-inspection.
