Inspector's notes

Observed an ambient air temp of 59*F when measured with a min/max thermometer. Inside the cooler, observed TCS foods holding between 58-64*F when measured with a probe thermometer, including raw chicken, beef patties, various cheeses, and diced chicken. Per PIC, the coolers were empty until stocking less than 2 hours prior. PIC stated they had experienced electrical issues with the outlet servicing the prep cooler 2 weeks prior which were thought to be resolved. All TCS foods improperly cold held were discarded by PIC at time of inspection. PIC stated that TCS foods would be placed in reach in coolers until the electrical issues are resolved. Corrective Action: Corrected at time of inspection.

Observed an ambient air temp of 59*F when measured with a min/max thermometer. Inside the cooler, observed TCS foods holding between 58-64*F when measured with a probe thermometer. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.

No County legal action will result from this inspection.There was a Y-valve or side kick attached to mop sink faucet that has an AVB; one side was connected directly to the chemical dispenser and one side was open. Explained to PIC that the AVB valve is not designed to be continuously under pressure and that there shouldn't be any obstructions downstream from the AVB valve. This could result in the backflow prevention device to fail. Install a dedicated water line for the chemical dispenser prior to next routine inspection.

Inspector's notes

Observed cooked onions, and cooked mushrooms with an internal temperature of 72F. Per PIC, the cooked onions, and mushrooms are held under time control. The cooked onions, and mushrooms did not have a time stamp. All TCS foods being held under time as a control were properly time stamped at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Corrective Action: Corrected at time of inspection.
