Inspector's notes

Observed cheese sauce in warmer of kitchen at 133*F, Hot hold to be 135*F or greater. Staff reheated cheese sauce at stove to 165*F and returned to warmer. As per the person in charge, the cheese sauce was prepared for use that day. Advised staff to verify hot hold temperatures throughout the day using their metal stem thermometer. Corrective Action: Corrected at time of inspection.

Observed brisket chili in warmer at 130-133*F. Hot hold of chili to be at 135*F or greater. As per the person in charge chili was prepared this am and placed in warmer about 12pm. Chili was reheated to 165*F and returned to warmer. Advised staff to use metal a metal stem thermometer to verify hot hold temperatures Corrective Action: Corrected at time of inspection.
