#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Glass door cooler in back room of kitchen had the following TCS foods measuring an internal temperature of 52-54'F: orange juice, milk, buttermilk, individual cream cheese packets, cups of rice pudding, and butter. Per kitchen employee items had been brought to establishment and placed in cooler by owner earlier in morning <4 hours prior. Employee moved TCS items to nearby walk-in cooler. Ambient air temperature of cooler measured 52.7'F with min/max thermometer. Person in charge will inform owner so that cooler can be serviced. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
