Inspector's notes

Observed cooked ground sausage covered in walk-in cooler with an internal temperature of 88*F. PIC voluntarily discarded at time of inspection. Also observed diced chicken and ham in pizza prep station with an internal temperature of 53*F. According to PIC, TCS foods had been previously diced and covered in plastic containers within 1 hour prior to inspection and were uncovered and moved to walk-in cooler to rapidly chill. Discussed approved cooling methods and provided guidance document.
