Predefined Comment: No County legal action will result from this inspection.Recommended drain tray for cut tomato and cucumber to encourage proper cold holding as well as closing 1" gap at bottom of walk-in fridge door. Reviewed with PIC that all pest control shall be done by a certified pest control company.

Inspector's notes

Observed 2 drawer refrigeration unit under flat top to be unplugged. Inside unit was raw burger patties with an internal temperature of 53°F and raw fish with an internal temperature of 71°F. Staff stated unit was working around 10am this morning but was moved and likely got unplugged in the process. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

No County legal action will result from this inspection.Of Note: Discussed with person in charge (PIC) 1) do not store TCS foods above the fill line of the containers cold holding in the prep table. 2) RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). 3) Employee drinks and foods shall be stored low and in way the prevent contamination of establishement's food, equipment, single use containers, food contact surface and clean linens.
