Per person in charge (PIC), items were left out for less than an hour prior to being put into the reach-in cooler. Discussed with PIC about not leaving food out and making sure the reach in doors are fully shut when done with any food preparation. PIC took lids off containers to help items rapid cool in reach-in at time of inspection. Discussed proper cold holding with the PIC. All TCS foods held cold must be held at 41*F or below at all times. Correct By: Corrected At Time Of Inspection
