Observed steak at 52F inside the prep fridge closest to the grill. Talked to manager about cold holding techniques and equipment spacing. Manager embargoed TCS foods in the fridge for over 4 hours. Ensure that TCS foods kept in cold holding areas are kept at 41F or less. See embargo form. Corrective Action: Corrected at time of inspection.
