Inspector's notes

Observed 130°F internal temperature, per probe thermometer, of cooked chicken inside hot holding cabinet across from cookline hallway. Per Person in Charge (PIC), foods inside hot holding cabinet were already at temperature and not in the process of reheating. Per PIC, cooked chicken was cooked and placed into hot holding cabinet 20 minutes prior to inspection. Except during preparation, cooking, or cooling all TCS foods shall be maintained at 135°F or above. Cooked chicken was reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed no chlorine test strips for chlorine dishmachine next to 3-compartment sink. PIC not able to provide chlorine test strips at time of inspection. Test strips are required for any sanitizers used with food contact surfaces. Establishment shall provide chlorine sanitizer test strips prior to re-inspection on 6/16/26. Corrective Action: Correct prior to re-inspection.
