Hand sink shall be fully stocked with soap and paper towels. Discussed providing adequate sanitizing solution with test strips Chlorine 50ppm to 100ppm or Quaternary ammonium 200ppm. Per employee, dishes are washed at a nearby single compartment sink. Discussed all warewashing shall be conducted in a three compartment sink for adequate wash, rinse and sanitize.Observed additional 5 gallon potable water feeding espresso machine, discussed adequate approval for this setup.

Observed freshwater tank for handwash station placed on concrete, not affixed to the mobile unit. Advised operator to affix freshwater tank to mobile food unit. MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department. Addl Notes: Operator could not provide a commissary visit log at time of inspection. Advised operator a commissary visit log shall be recorded, kept on the Mobile Food Trailer, and made available upon request.

At time of inspection the single hand wash sink on the mobile food unit was inoperable. Per PIC a water line was disconnected causing the sink to be inoperable. PIC connected the water line at time of inspection. Please ensure the hand sink is operable at all times. Corrective Action: Corrected at time of inspection.
