At time of inspection, observed several Time/Temperature Control for Safety (TCS) foods cold holding in the reach in coolers and temping between 45-63 F including carne asada, shredded cheese, el pastor, and chicharron. Per PIC, the TCS items went out of temperature during transport due to the refrigerator being unplugged 30 minutes ago. PIC plugged in the refrigerator, so food would return back to proper cold holding temperature. Per PIC, dry ice will be used during transport to assist with keeping food items in proper cold holding temperatures. Informed PIC that except during preparation, cooking, or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed pork, cheese, green chile, chorizo, carnitas, tripa, pico de gallo, and chicharrron, ranging from 46*F to 60*F in the bottom of the reach-in unit. Also, observed diced tomatoes (54*F) and shredded lettuce (60*F) in the ice shelf above the prep table with no ice. The tomatoes and shredded lettuce were placed in the unit at approximately 8:30am, time of inspection was approximately 9:00am. Ambient temperature of the unit was 48.2*F using min/max thermometer. Person in charge (PIC) stated that the food in the bottom reach-in was prepared yesterday at the commissary and stored. PIC transported the food in the reach-in unit this morning at approximately 8:30am per the PIC. Corrective Action: Corrected at time of inspection.

TCS food items in the cooler and cold rail will be discarded and replaced with fresh food items that are at 41*F or below at 4:00 PM, then at 8:00 PM which will take them to the end of the day. Reviewed time as a cotnrol policy with PIC. PIC stated they will return to cold holding once the cooler is fixed tomorrow. Time as a control must be used until the cooler has been repaired and is able to maintain a temperature of 41*F or below. Please have the cooler repaired and maintaining an ambien temeprature of 41*F or below prior to re-inspection on 8/1/24. Corrective Action: Correct prior to re-inspection.
