-- In reach-in refrigerator, observed chopped carne asada and al pastor in approximately 4"-6" deep containers with temperatures between 63°F-75°F using probing thermometer. Per PIC, the items were prepared approximately an hour ago from their restaurant and brought over to cool down. Reviewed MCESD requirements for type III MF permits: Food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. Requested the items be reheated to 165°F and hot held at 135°F at the time of inspection. Corrective Action: Corrected at time of inspection.

MCEHC Chap. 8, Sec. 3, Reg. 6d, 9d, 10e, 11d - Food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. This prohibition does not apply to foods that have been prepared or packaged in permanent food establishments or commissaries meeting the requirements of this code.

Sanitizer bucket observed with chlorine concentration below 50ppm. New solution was made with proper concentration (50-100ppm). Corrected at time of inspection. Wiping cloth observed stored on cutting board. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection.
