In reach-in cooler portion of prep table farthest from kitchen entrance, observed a single tray with both raw beef skewers and raw chicken skewers. Liquid from proteins was pooled on bottom of tray. Brought to attention of person in charge who instructed kitchen staff to separate. Discussed with person in charge why proteins need to be separated by cooking temperature to prevent cross contamination. Corrective Action: Corrected at time of inspection.
