Inspector's notes

Observed facility has cooked beef in the fridge. As per manager, they used it yesterday, and are holding it over from yesterday until today. Talked to manager about leftover policy in Maricopa County. Ensure that any TCS food on the truck today, is not held over for the next day. MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department. Addl Notes: Observed facility has no commissary log, and is not reporting to the commissary each day. Talked with manager about the commissary log, and are using BLT kitchens in the east valley, isntead of Ralphs in the west valley. Ensure that there is a record of every visit to the commissary, and kept on the vehicle.
