***Second Consecutive Violation*** On counter, shredded cheese/ 62*F and in top portion of prep table cooler, sliced cheeses/50*F out of internal temperatures. Per employee, cheeses were placed in cold holding within normal time parameters. Instructed employee to store shredded cheese in cold holding unit or ice bath and to separate overfilled containers of sliced cheeses to ensure proper cold holding temperatures. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.

Sitting on counter and in single door reach in refrigerator, containers of cooked onions/65*F-67*F prepared and cooling in covered containers about 6 inches deep. Employee moved uncovered container of onions sitting on counter and portioned out larger uncovered container in two shallow containers and placed all back into cold holding units to continue the cooling process. TCS foods are to be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Observed flat of shell eggs being maintained at room temperature, and the internal temperature of the eggs was observed at 57F. Observed cooked sausage patties/67F above the grill. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The PIC indicated that the food items had been out of temperature for less than a half hour and decided to monitor them using time as a control. A written policy and discard time were written/noted. Inspector emailed Time as a Control guidance document. Corrective Action: Corrected at time of inspection.
