Observed cooked beef on hot holding table holding at 120°F, having been placed there from reheating in the last hour and a half. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed drink station outside of mobile unit where employee was scooping ice, rimming cups with chamoy and tajin, and ladling aguas frescas at exterior tables near register. Informed vender that per MCEHC, all cooking, processing, preparing, grilling, assembly, storage, and service of any food or beverage shall be conducted inside the permitted vehicle. Advised employees to move drink station into unit going forward. Corrective Action: Corrected at time of inspection.

The operator explained the meat was cooked at their restaurant an hour ago and then put into the mobile unit's refrigerator. Advised operator about the limitations of the Mobile Food Type III permit.
