MCEHC Chap. 8, Sec. 3, Reg. 5c - Mobile food establishments shall provide a commissary agreement to the Department upon request, at permit issuance or renewal, and as a part of the documents submitted during plan review for a new permit. Ice cream vendors that only sell or dispense individually packaged, commercially processed items are exempt from providing a commissary agreement. Addl Notes: Owner did not have commissary agreement on site at time of inspection. Operator must report to commissary daily when they operate. Commissary will be used for items such as gray water disposal, fresh water supply, ware washing facility, food preparation facility, and garbage disposal. Hot dogs, sliced tomatoes, milk, shredded lettuce, and other TCS food items found with internal temperatures between 42-60*F in reach-in, prep, and low-boy coolers. Ambient temperature on on all coolers was above 50*F. PIC stated they last checked the coolers about 2 hours ago and ceased operations. PIC will continue to monitor the coolers and ensure the food items are cooled to 41*F before serving them. If TCS food items have not reached 41*F prior to 4:00 PM today, they will be discarded. Please ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.
