Inspector's notes
Observed multiple Time/Temperature Control for Safety (TCS) food items located in hot wells along the prep-line including cooked rice, Tripe (Tripa), and cooked beans registering internal temperatures ranging between 108°F-125°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. The food items were within adequate Time/Temperature parameters. Manager reheated food items to 165°F and placed them back in the hot wells. Corrective Action: Corrected at time of inspection.

Inspector's notes
At the time of inspection, the manager was not able to present the commissary agreement or commissary visit log to the inspector. Per manager, the documents were left in the vehicle that pulls the food trailer and was no longer on-site. The establishment shall provide the department with its commissary agreement and visit logs upon request. Corrective Action: Correct prior to next routine inspection.

MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.

PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals Observed the sanitizer bucket with in used chlorine sanitizer solution above 200 ppm when tested. Discussed with operator that in-used chlorine sanitizer have to read between 50-100 ppm for proper sanitizing of food contact and not food contact surfaces.
