Observed no hand sink at time of inspection, and operator were serving open drinks from large containers. Discussed with the operator that when operating and selling non prepackage food, hand sink must be available for hand washing. Operator provided hand sink at time os inspection. Corrective Action: Correct at once. 6-301.11 - Priority Foundation: Handwashing Cleanser, Availability. Inspector's notes
Observed TCS horchata drink in a large container with an internal temperature of 50 degrees F. Per operator, Item was made at commissary and brought to the market two hours prior to this inspection. Discussed with the operator that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Operator corrected by using time as control for drink. Corrective Action: Corrected at time of inspection.
