Observed cooked beef 56-57*F, salsa 45*F- 56*F, and cooked chicken 59*F in stand up cooler by three compartment sink at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per PIC, all TCS items were prepped within the previous 4 hours or used for recent catering order and were instructed to move to the other stand up cooler to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed various cooked meats, ex. birra (51°F), cooked and chopped chicken (50°F), and birra sauce (52°F) cold-holding above 41°F in the small standing refrigerator nearest the door. Foods deeper in the refrigerator were cold holding below 41°F. Alerted staff who stated they tend to have difficulty maintaining cold-holding foods in the summer after 12-noon (3 hours prior to temperature measurement). To combat this, staff attempt to limit opening refrigerators during the afternoon. Staff used ice to rapidly cool warm foods at time of inspection. Discussed maintaining extra ice during the summer months to cool foods as needed. Discussed cold holding requirements. Corrective Action: Corrected at time of inspection.

Wiping cloths are to be stored in sanitizer at the recommended range (150-400 PPM) to ensure proper sanitation of the wiping cloths between uses. All wiping buckets are to be changed every 4 hours. Re-educated staff on wiping cloths, sanitizer usage, and testing. Corrective Action: Corrected at time of inspection.
