Observed cooked shallots 56*f , cooked red peppers 57*f, and cooked sausage 130*f in active cooling process in make table. PIC stated items were made day of (with-in time frame) and had not finished cooling from commissary. Items ice bathed immediately to finish cooling at time of inspection.

Observed 6 packages of 30ct raw unpasteurized eggs stored in northeast walk in cooler stored above various vegetables, washed and unwashed. Also observed raw eggs and bacon in northwest cooler stored above various blocks of cheese. Provided food storage guidance document at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed TCS food within the walk-in cooler above 41'f. The ambient air temperature of the walk-in cooler using a min/max thermometer was at 55'F. TCS foods within the walk-in cooler were temped using a probe thermometer. Three probe thermometers were calibrated onsite prior to temping all food within the walk-in cooler. Internal temperatures ranged from 46'F - 66'F for all TCS food items within the walk-in (see embargo forms for description details). Owner was onsite and observed all food being temped and embargoed. There were no temperature logs onsite, or digital logs indicating when this particular walk-in stopped working. Since there were no records indicating when the food went out of temperature, all TCS foods were embargoed onsite. Eleven permits were affected by improper cold holding temperatures and were documented on embargo forms accordingly. Correct By: Corrected At Time Of Inspection
