Observed ceaser salad 58*F, stromboli, pepperoni slices of pizza, stromboli combo with an internal temperature of 78*F. According to logs, time as a control is used, but last batch of TCS foods were documented at 9:30AM. PIC stated items had been rotated within the last hour and documented proper time. Must provide written time as a control procedures. All TCS foods being held under time as a control were properly time stamped at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control.

Observed ziti sauce holding 50F, and meatballs holding 41-44F in the reach in cooler next to the prep sink. Also observed milk holding 44F. The unit was blowing 44F, captured using inspector's min/max thermometer. PIC moved all of the products to the walk-in refrigerator to call back down to 41F. TCS food items must hold 41F or below when cold holding. Corrective Action: Corrected at time of inspection.

Observed roasted potatoes holding 108-120F. PIC stated they were cooked and placed in the steam table at 10am. PIC stated that the potatoes are difficult to maintain temperature control. Recommended putting the potatoes on the 4 hour time policy to better control temperatures. The potatoes were discarded. TCS foods must be stored at 135F or greater when hot holding.
