At time of inspection, observed an open bag of raw shrimp stored in the reach-in refrigerator over bags of diced tomato and cucumber. Ready-to-eat foods shall not be stored under raw animal proteins, and raw animal proteins shall be stored in order of their cooking temperatures as per Code. During inspection observed the following TCS items located on counters throughout the mobile food unit with temperatures ranging from 50*F to 52*F: cooked octopus, raw oysters, red salsa and diced tomatoes. Per the person in charge the items had been removed from the prep refrigerator for about 30 minutes. Upon request, the person in charge placed the items specified back into the prep refrigerator unit and established an ice bath around the items. The items were reprobed 40 minutes later to ensure they established an internal temperature of 41*F degrees. Please ensure TCS food is cold-held at 41*F degrees or lower. Corrective Action: Corrected at time of inspection.
