At start off inspection, observed laundry powder detergent being used at hand sink for handwashing. PIC did not have any other soap on unit. Operator was able to retrieve additional hand soap from another vendors for sink at time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC only had scented laundry bleach on unit with added whiteners on unit at time of inspection. No other approved sanitizers were present. Operator was able to retrieve additional plain bleach from nearby grocery store at time of inspection. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Corrective Action: Corrected at time of inspection. 7-202.11 - Priority Foundation: Restriction-Presence and Use Addl Notes: Operator had powder laundry detergent at their hand wash station in place of hand soap, and did not have nay other soap on unit. Only those poisonous or toxic materials that are required for the operation and maintenance of a food establishment, such as for the cleaning and sanitizing of equipment and utensils and the control of insects and rodents, shall be allowed in a food establishment. -- In deep freezer and reach-in refrigerator, observed diced tomatoes, shrimp, pico de gallo, cucumber, and cheese with temperatures ranging from 71°F-84°F. The person in charge (PIC) stated they just arrived an hour prior to the inspection (2:30 PM), and the refrigeration units have just been turned on. Per PIC, they will only be working for 4 hours due to high weather temperatures. The PIC stated all TCS items will be discarded if not sold within 4 hours. At the time of inspection, the TCS items were placed in an ice bath to rapidly cool items to 41°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed several trays of cooked shredded beef holding in reach in cooler at 70 degrees Fahrenheit and above. PIC explained they had been loaded into the cooler around 11 am. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Alternate meat was retrieved from commissary and all TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
