This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.

Cooked green chiles, green chile pork, and red chile pork found with internal temperatures from 119-170*F. The green chiles were found with the coolest temperatures with a maximum of 125*F, while the pork items were found with mostly hot temperatures with cool spots around 120-133*F. PIC stated the items had been in the hot holding units since this morning around 7:00 AM. 3 other food items in the same unit were found with temperatures completely above 140*F and up to 175*F. Discussed monitoring and stirring product to ensure proper hot holding of products. PIC will not serve the products but instead took them home for personal use. Please ensure hot held TCS food items are maintained at 135*F or above. Corrective Action: Corrected at time of inspection.
