-- Cooked eggs in broth and cooked shrimp sitting out in containers with internal temperatures between 109°F- 125°F. The PIC stated the items were prepared approximately 1 hour prior to the event and they get reheated to order. At the time of inspection, the PIC stated they will discard items after 4 hours have exceeded (event from 7PM - 10 PM). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
