Sitting on top of hot holding unit, sausage links in buns with internal temperatures of 100*F. Per employee, meat was off of smoker for "just a couple minutes". Employee moved links back to smoker to reheat to 165*F. Maintain TCS (time/temperature control for food safety) foods at a hot holding temperature of 135*F or higher at all times. Corrective Action: Corrected at time of inspection.

This log shall be maintained using a Department approved format and maintained with the establishment at all times.
