Inspector's notes

Observed several Time/Temperature Control for Safety (TCS) foods cold holding in the prep top table and temping 50-55 F such as raw beef, raw pork, and in-house salsa. PIC stated the food was placed in the cooler an hour ago. PIC relocated TCS items in their other two reach in coolers, and the items reached 40-41 F. Advised PIC that except during preparation, cooking, or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cooked jalapenos in a container on the steam table with an internal temperature of 130*F. Per person in charge the jalapenos were cooked about ten minutes prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. The cooked jalapenos were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.
